Chocolate Cake

I make this using a loaf tin but it could be made in a bundt tin which would reduce the cooking time.

Ingredients:

  • 4 oz margarine
  • 6 oz castor sugar
  • 6 oz self raising flour
  • 1 heaped tsp baking powder
  • 2 tsps coco powder
  • 4 tbsp milk
  • 2 large Eggs

Method:

Pre-heat the Halogen oven to 170°C

Use the extension for this recipe.

Line a 1 lb loaf tin with greaseproof or parchment paper.

In a large mixing bowl, mix sugar and butter together, now add the eggs and beat well.

Gradually sift in the flour and the baking powder and mix well.

In a small cup or jug pour in 4 measured tablespoons of milk, add the 2 teaspoons of coco powder and mix together until smooth.

Add this to the cake mixture stirring until the coco mixture has been well mixed in.

Keep beating the mixture until it reaches the dropping consistency that you get when it is ready to put in the tin.

Put cake mixture in tin and place tin on top rack and cooked for 50-55 mins.

Test it with a skewer, if the skewer comes out clean and not sticky it is done. If not then cook for a further 5-10 mins.
