Coriander and Garlic Naan Bread

 

Coriander and Garlic Naan Bread (also Seeded Naan)

Cooking 25 mins

Ingredients:

  • 1 lb 5 oz Strong white flour + little extra for dusting
  • 1 tsp salt
  • 1 tsp caster sugar
  • 2 tsp easy blend yeast (dried)
  • 3 oz butter + extra for greasing
  • handful chopped coriander leaves
  • 2 garlic cloves crushed
  • 9 fl oz warm milk
  • 2 tsp natural yogurt

Method:

Put flour salt, sugar and yeast into large bowl.
Melt 2 oz butter and stir in along with warm milk coriander, garlic and yogurt.
Mix with round bladed knife to make dough, add dash more milk if dough is crumbly.
Turn dough out to floured surface and knead for 10 mins until smooth and elastic.
Place in lightly oiled bowl cover with cling film leave to double in size.

Tip dough out to lightly floured surface cut into 8 even sized pieces. Roll each into a ball, cover with clean tea towel leave to stand for 10 mins.
Thinly roll out each ball into large tear drop shape place on floured tray.

Melt the remaining butter and brush a little over two of the breads.
Transfer to greased baking sheet place on upper rack. Cook for 6 mins @ 250°C /482°f
Stack on plate cover with tea towel while rest are cooked in the same way.

For Seeded Naan

Crush 10 cardamon pods using mortar & pestle, remove husks and crush seeds as finely as possible.
Add 2 tsp coriander seeds and 2 tsp cumin seed to mortar and crush again.
Mix into dough ingredients and make as above. Sprinkling sesame seed after brushing with melted butter.
