Roast leg of lamb


  • Leg of lamb
  • Clove of garlic sliced
  • sprigs of fresh rosemary
  • Salt and pepper to taste
  • Olive oil


  1. Cut all excess fat from the meat
  2. Stab the lamb all over with a sharp knife
  3. Insert the slices of garlic and small sprigs of rosemary into the cuts
  4. Season the lamb well with salt, pepper and rub the oil in
  5. Place the lamb on a low wire rack into the oven at 200 °C
  6. Cook for about 20 minutes
  7. Turn the meat over and reduce the thermostat to 180 °C
  8. Cook the lamb for a further 60 minutes or until done to your taste.
