Roasted Potatoes in Goose Fat


  • 800g Potatoes
  • 2 tbsp goose fat
  • Pinch of salt


Peel the potatoes and cut each one in half or into three if the potatoes are large.

Put the potatoes in a large saucepan and cover with cold water, add a good pinch of salt.

Bring to the boil and simmer for 3-4 minutes.

Drain the potatoes and return them to the pan and give them a good shake, this will make the edges rough, ensuring a crispy potato.

Spoon the goose fat into a shallow roasting tray (20x20cm) and place on the high rack in the halogen oven, set temperature to 220°C and heat for 5 minutes until the fat is very hot.

Using tongs, carefully place the potatoes into the fat, turning them over to coat.

Put the lid back on and cook for 15-20 minutes turning them over half way through.
