Stuffed Mushrooms

Preparation and cooking time approx 40 mins @ 175°c and 200°c
You will need low rack, high rack and tray.
Serves 1 or 2 depending how hungry you are ?

Ingredients:

  • 2 x whole Cap Mushroom (s)
  • Cream cheese (Garlic and herbs or onion and chives, both yummy)
  • 3 x rashers of bacon (back is good)
  • 1 x tsp lemon juice or water
  • 1 x tbls oil

Method:

Clean and de-stem Caps, Keep the stems. Wrap caps in silver foil with tsp of liquid, not too tight
Cut bacon into bite size bits, these will have to fit into cap
Place lower rack in oven, preheat to 200°c
Clean and slice stems
Put foil wrapped caps onto low rack then add high rack with tray, oil and bacon, cook for 10 minutes or until bacon begins to cook.
Then put stems in with bacon, cook for a further 3 to 5 minutes.
While bacon is cooking prepare cheese in bowl. You will need to mix cooked bacon and stems with cheese to form a rough paste.
Remove high rack and tray, reduce heat to 175°c.
Remove caps and open up foil, spread cheese and bacon mix into caps, leave foil open, return to low rack and cook for 5 to 10 minutes or until caps look like start browning.
