Yummy Muffins

These muffins are so yummy!!

Ingredients:

Sponge

  • 2 eggs
  • 100g caster sugar
  • 100g self-raising flour
  • 100g margarine / butter
  • few drops vanilla extract / essence
  • 50g sultanas (washed) optional

Icing

  • margarine / butter
  • icing sugar
  • few drops vanilla extract / essence

Method:

1. Put all the ingredients for the sponge into a mixing bowl. Beat with an electric whisk for about two minutes until all combined.

2. Put muffin cases into a six cake muffin tin.

3. Spoon in sponge mixture, about three dessert spoons per cake will fill the six.

4. Put in the oven on the low rack for 20-25 mins at a temperature of 150°C. Check if cooked by inserting a knife in the cakes and seeing if it comes out clean.

5. Remove from the oven and place on a rack to cool.

6. Mix some icing sugar with some margarine / butter and the vanilla extract to make butter icing. Make as much as you want! Keep adding icing sugar until the icing is pale.

7. When the muffins have cooled, slice a circle from the tops of the cakes, fill with the butter icing and replace the tops, cutting them in half to make butterfly wings.

8. Enjoy!
