Fruit Tea Loaf

 

Fruit Tea Loaf in Halogen Oven

Ingredients:

  • 6 1/2 oz of strong white bread flour
  • 6 1/2 oz of plain flour
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1 x 7g sachet of fast action dried yeast
  • 1 tbsp soft brown sugar
  • 1 tsp salt
  • Grated zest of a lemon
  • 1 egg
  • 1 tbsp golden syrup
  • 150 ml warm water
  • 5 oz dried fruit

Method:

Put the flours, cinnamon, ginger, yeast, sugar, salt and lemon zest in a bowl. Make a well in the centre, pour in the egg, treacle and warm water.
Knead for 10 mins on a floured surface or 5 mins by hand in a mixer. Either by hand in a bowl or in the mixer, add the fruit and knead until well combined.
Put into a loaf tin base lined and greased. Cover with a damp tea towel or oiled cling film and leave somewhere warm until doubled in size. Glaze with egg or milk.
Preheat the oven to 200 c, place the tin on the low rack in the oven and put on the extender ring.
Cook for 30 mins. Take out of tin, turn upside down and put back in oven without tin for another 10 mins. Leave it to cool.
