Rhubarb Brown Betty

 

This is a most tasty dessert. If you are not into Christmas puddings this is a very good substitute. It goes down a bomb when we cook this.

Ingredients:

  • 100 grams of fresh brown bread crumbs
  • 175 grams digestive biscuits crushed
  • 100 grams of dark brown sugar
  • 5 ml of ground cinnamon
  • 1.25 ml of ground nutmeg
  • grated rind of 1 lemon
  • grated rind of 1 orange
  • 175 grams of melted butter
  • 3/4 kg of chopped rhubarb
  • 100 grams of sultanas

Method:

preheat the oven to 175c

mix the breadcrumbs, crushed biscuits,sugar, spices, lemon and orange rinds and melted butter.

Use about 1/3rd of the mixture to cover the bottom of a greased glass oven proof dish.

Cover with half the rhubarb and sultanas, continue making layers this way, ending with the breadcrumb mixture.

Bake in the halogen oven for approximately 20 minutes on 175c, then check if done. If not give it a little longer. The top should be a crispy golden brown in colour.
