Chocolate Fairy Cakes
Ingredients:
- 4 oz margarine
- 4 oz castor sugar
- 4 oz self raising flour
- 1 tsp baking powder
- 2 eggs
- 3 oz cocoa powder
Method:
Cream margarine and sugar together, beat the eggs and gradually add to this mixture.
If it curdles add a bit of flour in between.
When combined and creamy in texture add flour, baking powder and cocoa powder.
Mix well together until all ingredients are totally combined.
I use a 6 hole bun tin which fits into my halogen oven, lined with cake cases.
Spoon a dessert spoonful of mixture into each case.
Place the bun tin on the low rack in the oven and put the extender ring on top.
Set the oven temp to 160°C and bake for 15 mins.
I don’t know if it was the heat of the bun tin on the bottom of the cakes, but they came out perfectly cooked all the way through and well risen.
For plain fairy cakes just omit the chocolate.
