Baked Apple
Cooking Time: 30 mins
Ingredients:
4 large baking apples
60g soft brown sugar
1 tsp cinnamon
60g chopped pecan nuts
60g raisins or currants
1 tbsp butter
50 ml boiling water
Method:
Preheat the Halogen Oven to 190°C / 375°F
Wash the apples, remove the cores and cut 1cm off the bottom of the apples (it helps if you have an apple corer), alternatively you can use a paring knife to cut out first the stem area, and then the core.
Use a spoon to dig out the seeds and make sure the hole is about 1 – 2 cms wide
In a small bowl, combine the sugar, cinnamon, raisins/currants, and pecans. Place apples in a round baking dish (26cm approx)
Stuff each apple with the filling and top with a teaspoon of butter
Add the boiling water to the baking dish and place onto the top shelf.
Bake for 30 mins, until tender, but not mushy.
You will need to baste with the juices at the bottom of the dish every 10 mins
Serve warm with vanilla ice cream on the side
