Lamb Kleftiko

My first attempt was trial and error.
It depends how you like it. Most people like it falling off the bone. We like it to slice like roast lamb.
We buy it ready spiced from our local butchers.
There are plenty of recipes online for it, here’s how I did mine.

Method:

Take 2 lamb shanks rub all over with lemon juice.

Put separately in tin foil, add the herbs and spices of your choice, e.g. garlic, oregano, bay leaves, black pepper.

Cook on 180°C for 1 hour.

Take out of tin foil, place back on rack and cook for a further 70 mins.

Cut potatoes longways into 4, put on rack with 45 mins to go.

Use juice at bottom of bowl to make rich gravy.

Do veg of your choice.

Don’t forget I am only a novice at this.
