Pumpkin Fruit Cake
Diabetic Friendly
Ingredients:
- 375g Mixed Fruit
- 250 ml boiling water
- 1 cup of mashed pumpkin (Your cup plus a little more, use a sweet type of pumpkin)
- 190g self raising flour
- 1 teaspoon mixed spice (5 ml spoon)
- 1 teaspoon bicarb soda
- 1 egg
Method:
Mix water and fruit together and microwave 3-4 mins (Stir after 2 mins)
Once cool, mix together with cooled pumpkin
Add flour, spices, bicarb and egg
Pour into ring pan.
Preheat oven to 150°C
Place pan on low rack, use extension ring and cook for 1 hr
Remove from oven and cover with foil and leave to cool in tin.
(I have also cook it in a big oven , in a cake pan at 175°C for 1 hr)
