Apple Eve’s Pudding

Serve 2 but all easy to increase.

Ingredients:

  • 20 x 28 cm oven dish
  • 2 – 3 apples
  • squeeze lemon
  • 1 tablespoon caster sugar
  • 1 tablespoon water
  • knob of butter

Method:

Cook apples in middle oven, stir regular till lightly coloured and nearly cooked 10-15 mins

To make the sponge:

  • 50g butter
  • 50g caster sugar
  • 1 egg beaten
  • 50g self-raising flour

Cream sugar and butter, add egg stir quickly. Fold flour lightly don’t over work. Plop dough on fruit (don’t worry if fruit not fully covered) Cook @ 170º C – 175º C for 40 mins or until skewer comes out clean. Leave to cool. Serve with custard, cream, ice cream or just plain.
