Basic Fruit Cake
Ingredients:
- 4 oz Butter/Margarine
- 4 oz Sugar
- 4 oz Self Raising Flour
- 2 Eggs
- 2 oz Mixed Fruit (can be more if you like)
- Little milk
Method:
Cream butter and sugar
Mix in eggs one at a time
Fold in Flour
Mix in fruit and if you like, ½ tsp mixed spice
Add milk little by little to get a dropping consistency.
Next is one of 2 different things:
Single Cake
Grease a ring cake tin. Put mixture into tin and make it roughly level. Cook at about 180°C for about 25 minutes or until a knife/skewer inserted into cake comes out clean.
Leave to stand for about 5-10 minutes, then turn onto wire rack to cool.
or
Muffins
Grease some ovenproof ramekins
Half fill with mixture.
Cook at about 180°C for about 25 minutes or until a knife/skewer inserted into cake comes out clean.
Leave to stand for about 5-10 minutes, then turn onto wire rack to cool.
This recipe can be varied with fruit/chocolate/coconut etc
Its very versatile. I use virtually the same recipe in the microwave, cooking for about 5 minutes but does not brown.
