Chicken Kiev with Bacon
This is a recipe I came up with for the George Foreman, but tastes completely different in the Halogen Grill.
Ingredients:
- 1 Medium chicken breast
- 1 Small/medium clove Garlic
- Butter or equivalent (Philadelphia works well)
- Parsley
- 2 rashers of bacon
Method:
- Dry the chicken breast in kitchen towel
- Slice down the length to make almost 2 fillets but don’t slice right through, open and lay on board
- Spread one side with butter
- Sprinkle garlic which is finely chopped (be careful – I used too much and it was a bit strong) over the butter trying to keep it even.
- Sprinkle the parsley over this (I used dried, but fresh chopped would be better)
- close the chicken breast up again
- wrap widthwise with the bacon
Put on a baking tray and cook at 200°c / 400°F for 10 minutes. Once cooked, leave to stand a few minutes before serving.
The chicken was cooked moist, and the bacon cooked a little dry, but this is a good combination.
Worked well and definitely better this way.
