Crustless Quiche with Low Fat Cottage Cheese

Hi everyone, tried this recipe today in my Halogen Oven and it turned out brilliant. Thought I’d share it with you all.
Haven’t used pastry as my husband isn’t keen on it but you can use a pastry base if you want. I’ve also used cooked ham but you can use any other filling.

Ingredients:

  • 3 large eggs
  • 1 large tomato sliced
  • 150-200g cottage cheese
  • 120g cooked ham
  • 1 small onion chopped
  • grated cheese for topping

Method:

Mix eggs, cottage cheese, ham and onion together in a bowl. Put mix into a casserole dish, place sliced tomato on top of the mix, top off with the grated cheese.

Bake in the Halogen @ 170°c for 20 mins on the low rack. When golden-brown cover with foil and cook for another 15 mins.

Test with a knife or skewer to check inside is set.
Allow to cool before removing.
