Light Chocolate Muffins
Light Chocolate Muffins
Yesterday I made light muffins with chocolate. They were wonderful.
Ingredients:
- 120g sugar
- 150g flour
- 30g cacao powder
- 1 teaspoon of bicarbonate
- 8g of baking powder
- 80 ml oil (corn)
- 80 ml light yogurt
- 100 ml lowfat milk
- vanilla essence
Method:
In a bowl, combine flour, sugar, baking powder, bicarbonate, cacao powder and mix well.
In another bowl, combine the other ingredients and blend well.
Then add dry ingredients all at once; stir until dry ingredients are moistened.
Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.
Place tray of uncooked muffins on the low rack.
On the high rack put an aluminium foil (as a cover} and cook like this for 10 minutes.
Then take the aluminium foil off and I cook for 6 minutes.
Temperature: 180°C.
