Macaroni Cheese

Lovely – especially if you are on Slimming World.

Ingredients:

  • 100g dried macaroni
  • 2 tsp olive oil or frylight
  • 6 spring onions chopped or diced onion
  • 4 beaten eggs
  • 1/4 pt milk
  • 100g mature cheddar cheese, grated
  • 1 tsp dried mixed herbs
  • salt, freshly ground black pepper
  • few dried chilli flakes

Method:

Boil macaroni for 11 mins and drain.

Meanwhile, fry onions for 2-3 mins.

Beat eggs and milk together. Add cheese, herbs, seasoning, onions.

Add macaroni and pour into prepared 8″ cake tin which has been lightly oiled.

Put on low rack in halogen oven at 180°C for 25 mins.
