Pork Loin Steaks with Lemon and Mint

Lovely fresh summer flavours which blend beautifully.

Serves 4

Ingredients:

  • 4 lean pork loin steaks – about 450g – 500g in total
  • juice of 1 lemon (or approx 60ml lemon juice)
  • zest of 1 lemon (optional but does improve the flavour)
  • 2 tablespoons of fresh mint – chopped
  • 1 teaspoon of ground cinnamon
  • 1 tablespoon oil

Method:

Mix the lemon juice, zest, mint, cinnamon and oil in a shallow dish.
Add the pork steaks turning to coat, marinate for approx 30 minutes, turning again halfway through.

Preheat the oven for 5 minutes at 250°C
Place the steaks on a baking tray and cook for about 5 minutes per side on the top rack – brushing with remaining marinade after turning.
Times may vary depending on thickness of the meat and your oven- check pork is thoroughly cooked before serving.
