Spicy Leftover Chicken Burgers
Makes 4 small burgers but is easily adapted for 8 or more
Ingredients:
- 125g leftover cooked chicken, finely chopped
- 50g breadcrumbs (made from day old bread)
- 1 medium egg, lightly beaten
- 1 teaspoon lazy ginger (or fresh ginger, grated)
- 1 teaspoon lazy chilli (or 1/2 teaspoon chilli powder)
- 1 tablespoon coriander leaves, chopped (or 1/2 teaspoon ground coriander)
- Salt and freshly ground black pepper
- Flour for dusting
Method:
Combine all the ingredients except the flour. A lovely smooth consistency can be achieved in a food processor.
Quarter the mixture and shape into balls using wet hands. Flatten a little and dust both sides with a little flour.
Spray a baking tray with a little oil. Place the burgers on the tray and spray the tops with a little oil too.
Place on the top rack of the Halogen and cook at 220°C for 7-10 minutes until browned on top (they will have browned on the bottom too so no need to turn over)
Serve with dipping sauces of your choice and a fresh salad.
